**Ingredients:**

**For the Sponge Cake:**

- 4 large eggs, separated

- 3/4 cup granulated sugar

- 1 cup all-purpose flour

- 1 tsp baking powder

- 1/4 tsp salt

- 2 ripe bananas, mashed

- 1 tsp vanilla extract

**For the Filling:**

- 1 cup heavy whipping cream

- 1/4 cup powdered sugar

- 1 tsp vanilla extract

- 2 ripe bananas, sliced

**For the Caramel Sauce:**

- 1 cup brown sugar

- 1/2 cup heavy cream

- 4 tbsp unsalted butter

- 1 tsp vanilla extract

- Pinch of salt

**For the Garnish:**

- Crushed graham crackers

- Banana slices

- Powdered sugar

**Instructions:**

1. **Preheat and Prepare:**

   - Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper.

2. **Make the Sponge Cake:**

   - In a large bowl, beat the egg yolks with granulated sugar until light and fluffy. Mix in the mashed bananas and vanilla extract.

   - In a separate bowl, whisk the egg whites until stiff peaks form.

   - In another bowl, sift together the flour, baking powder, and salt. Gently fold the dry ingredients into the yolk mixture, then carefully fold in the beaten egg whites.

   - Spread the batter evenly in the prepared pan and bake for 10-12 minutes, or until the cake is lightly golden and springs back when touched.

3. **Roll and Cool:**

   - Immediately after baking, transfer the sponge cake onto a clean kitchen towel dusted with powdered sugar. Carefully roll up the cake with the towel and let it cool completely.

4. **Prepare the Filling:**

   - While the cake is cooling, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.

5. **Assemble the Cake:**

   - Unroll the cooled cake and spread the whipped cream evenly over it. Arrange the banana slices on top. Roll the cake back up tightly.

6. **Make the Caramel Sauce:**

   - In a saucepan over medium heat, combine the brown sugar, heavy cream, butter, vanilla extract, and a pinch of salt. Stir continuously until the mixture thickens and becomes smooth.

7. **Drizzle and Garnish:**

   - Drizzle the caramel sauce over the rolled cake. Garnish with crushed graham crackers, additional banana slices, and a dusting of powdered sugar.

8. **Serve:**

   - Slice and serve. Enjoy every delightful bite!
