Fresh Avocado Tomato Bruschetta




**Ingredients:**

- 1 French baguette, sliced into 1/2-inch thick slices

- 2 ripe avocados, diced

- 2 cups cherry tomatoes, quartered

- 1/4 cup red onion, finely chopped

- 2 cloves garlic, minced

- 2 tbsp fresh basil, chopped

- 2 tbsp olive oil, plus more for brushing

- 1 tbsp balsamic vinegar

- Salt and pepper, to taste

- Fresh basil leaves, for garnish (optional)


**Instructions:**


1. **Prepare the Baguette:**

   - Preheat your oven to 400°F (200°C).

   - Arrange the baguette slices on a baking sheet.

   - Lightly brush each slice with olive oil.

   - Toast in the oven for 5-7 minutes, or until golden and crispy.

   - Remove from the oven and set aside to cool slightly.


2. **Prepare the Topping:**

   - In a medium bowl, combine the diced avocados, quartered cherry tomatoes, finely chopped red onion, minced garlic, and chopped fresh basil.

   - Drizzle with olive oil and balsamic vinegar.

   - Season with salt and pepper to taste.

   - Gently toss to combine, being careful not to mash the avocados.


3. **Assemble the Bruschetta:**

   - Spoon the avocado and tomato mixture onto each toasted baguette slice, ensuring each slice is generously topped.


4. **Garnish and Serve:**

   - Garnish with additional fresh basil leaves, if desired.

   - Serve immediately.
