- Assorted fresh fruits (such as strawberries, raspberries, blueberries, kiwi, and peaches)

- Fresh mint leaves for garnish (optional)

#### Instructions

1. **Prepare the crust:**

   - In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.

   - Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Press firmly to ensure the crust holds together.

   - Refrigerate the crust while preparing the filling.

2. **Make the cheesecake filling:**

   - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

   - Add the powdered sugar and vanilla extract, and continue to beat until well combined.

   - Pour the filling over the prepared crust, spreading it out evenly.

3. **Chill the cheesecake:**

   - Cover the cheesecake and refrigerate for at least 4 hours, or until firm. Overnight chilling is recommended for the best results.

4. **Add the fruit topping:**

   - Once the cheesecake is set, arrange the assorted fresh fruits on top of the cheesecake as desired.

   - Garnish with fresh mint leaves if using.

5. **Serve:**

   - Carefully remove the sides of the springform pan before serving.
